I picked up a tube of MasterPro Chemicals High-Temp Wheel Bearing Grease from Oreilly's which is a lithium base grease, but starting to wonder if I should get one of the more expensive greases meant specifically for a trailer.

Pumping the new grease in will force the old grease out, that is how the EZ-Lube is designed to work. It has worked fine for me. I spun the wheel while slowly pumping the new grease in and have had no issues. Don't pump so fast and hard that you don't allow the old grease to be displaced, just slow and steady.
